World Cup-Board Recipes

The DEM Wellness Team is excited to announce the winner and share the recipes submitted to the World Cup-Board Recipe Challenge in December. The challenge was to create a recipe using only the food you already have at home, while trying to include as many shelf-stable staples as you can. The winner of the challenge was Personal Naan Pizzas, submitted by Kate Kurek! Congratulations, Kate! Thank you to Anthony Baxter and Martha Kowalski for your delicious submissions. Personal Naan Pizzas Ingredients:
  • Individual naan breads (from Costco)
  • Spaghetti sauce
  • Mozzarella cheese
  • Cheddar cheese
  • Parmesan cheese
  • Goat cheese
  • Bacon bits
  • Basil
  • Oregano
Preheat oven to 425 Spread spaghetti sauce & cheese on each naan bread Option: add goat cheese, bacon, & basil Bake for 8-12 minutes   Baked Pasta with Spinach Ingredients:
  • Any spiral-like pasta, around half of a bag/box depending on how much you make
  • Half a jar of marinara sauce
  • 1 bag of frozen spinach
  • 2 tablespoons of butter
  • 1 cup of shredded Parmesan cheese
  • Sliced mozzarella/muenster or any well-melting cheese
  • Couple spoons of ricotta cheese (optional, if available)
  • Salt & Pepper to taste
  • Couple sprinkles of Trader Joe’s 21 Seasoning Salute – optional, if available, but this stuff goes with everything
Thaw and sauté spinach in a skillet with butter and seasonings; at the same time, cook pasta until al dente. Heat up marinara sauce in a small pot until it comes to a slow boil. In a glass baking pan (whatever dimensions available), layer pasta, spinach, sauce, and cheeses – there’s no particular order but for best results: half of the pasta, sauce, spinach, ricotta cheese if you have it, sliced cheese, more sauce, rest of pasta (repeat as needed per height of the pan), top off with shredded Parmesan. Bake covered by aluminum foil for about 1 hour at 375 degrees.   Black Bean Stew with Jamaican Curry Cabbage and Coconut Rice Bean Stew Ingredients:

Cranberry Cake with Lemon Glaze Ingredients:
  • 2 cups flour
  • 2 cups sugar
  • 3 eggs
  • 3/4 cup butter, softened
  • 12 oz dried cranberries
  • 1 packet of vanilla sugar (or regular sugar)
  • Splash of olive oil
  • Couple teaspoons of lemon juice
  • Several teaspoons of powdered sugar
Re-plump dried cranberries by sprinkling on vanilla sugar and pouring over with hot water, stir to combine and let sit while doing the rest of the work. With a mixer, beat together eggs and sugar until pale yellow in color and batter starts to ribbon. Then add butter and once combined, add flour slowly. At the end, add a splash of olive oil (eyeball about 2 tablespoons but no exact measurement). Drain cranberries and gently fold them into batter with a spoon or spatula. Grease a glass baking pan with either cooking spray or by buttering the dish thoroughly, and transfer batter into pan. Bake at 350 degrees for 40-50 minutes. To make the glaze, stir together powdered sugar and lemon juice – no exact measurements, as much glaze as you want to cover cake, just that consistency should pour easily but not completely like liquid; ratio of sugar to lemon juice depends on sweet vs. sour preferences, cake is sweet so can be more on lemon-y side. Once cake is out of the oven, let cool for about 15 minutes and then drizzle glaze across surface in crisscross patterns.   Messi Alfredo Casserole Ingredients:
